Like Ms. Steadfast Warrior, I was inspired while I was cooking earlier this week. Don't these veggies in their glorious coat of colors scream VARIETY to you?For the inquiring minds, I drizzled these veggies with olive oil so the Sazon would stick to them, roasted them, and served them over Parmesan Couscous.
