I'd like some ideas for later in the week.
Tonight, we are having pork loin with a mesquite dry rub; mashed sweet potatoes with a bit of butter, a little brown sugar, a dash of vanilla, cinnamon, and a shake of ground cloves; and yellow squash and onions sauteed in soy sauce.

Orange Soy Salmon - marinate 4 6-oz skinless salmon fillets in 1/4c soy sauce, 1/4c OJ, 1/4 tsp oregano, 2 minced cloves of garlic. Remove from marinade, bake at 400 for about 18 minutes until fish flakes easily with a fork. YUM!
Wow! That sure beats the chili and french fries we're having for dinner!

Last night I had Taco Hell since I worked so late. Tonight is much better. I'm making chili (a really simple version of chili).

We had a vegie curry (chickpeas, carrot, snowpeas, onion and garlic, yellow curry paste and a can of coconut flavoured low fat canned evaporated milk) with basmati rice. Grocery shopping day is tomorrow, and I am on Weight Watchers at the moment, so trying to be healthy and creative with an empty cupboard.

Easy and cost effective meal:
Turkey legs (usually come in 3 pack)
cream mushroom soup
dry onion (or onion mushroom) soup mix
1 c. water
Combine soup, soup mix and water and pour over turkey legs in crockpot. Cook on high for 4-5 hours or low 7-8 hrs. Makes it own brothy gravy (which is really really good) Serve with potatoes or brown rice.
Even my 2.5 yr old who will not eat meat ate a ton of this as long as it had the gravy on it.
Comfort food for rainy weather like we are having at the mo.
Last night we had homemade spinach and 3 cheese ravioli. It was really good! We're going to use the left over filling to make stuffed manicotti.
