SHOW AND TELL: inspiration in the kitchen

As I've said before, I like to cook and I rarely cook from recipes. Today, I had actually planned ahead (ok, get over the shock y'all) and had the chicken for dinner thawed out early early in the day. I was getting tired of baked chicken or even chicken marinated and then baled. I wanted to make something different. I pulled out a cookbook and found a recipe...but it looked a little boring to me. So, I started pulling things out...

and, I turned 4lb of chicken thighs, 3 qts of water, 6 sm to med potatoes, an onion, two cans of mushroom, 2 cans of tomato paste, a little salt, 2 packets of Sazon, black pepper, garlic powder, 4 bay leaves, oregano, 2 cups of frozen green beans, and two cups of frozen corn into this...
The sauce thickened quite a bit as it cooked and I believe it will be excellent over rice.

You brave girl!! You KNOW I am a recipe sticker but your sauce looks awesome!

and...btw...I'm totally freakin out that HP is only a day away!!! Although, I don't plan to go for a little while cause I want to enjoy the movie, not be crowded by masses and masses of potentially hooded people!

I gotta have my recipes - but I so admire you talented people who can create something delicious out of thin air!

that looks much better than my toaster oven "grilled/toasted" cheese sandwich I had for dinner!

I second Cara, you are brave! I am always afraid of tweaking recipes I find... I mean, I try to, but it usually doesn't work out for me.

Kudos.

I love cooking!! That looks yummy :) try this one: coat chicken breasts with orange juice then bread with Panko bread crumbs and orange zest. Pour remaining orange juice (about 1/2 cup) over breasts in a pan and bake. You can also add a kick by adding a teeny bit of chili powder to the bread crumbs. Delish!!!

Yum. Looks deelish! Most of my favorite meals start out as "Oh, crap. Looks like I don't have the right ingredients for 'blah-blah-recipe'. I guess I'll just make something up!" My latest is a recipe I'm posting soon for a Thai-style shrimp scampi (missing certain ingredients, had extra of others on hand for a different recipe that didn't work out, so Boom! A new version of shrimp scampi!).

I never follow recipes much either. Regretted it last night when the rice crispy treats came out too crispy lol. Looks good though

I usually like to try a recipe so I know what it's should taste like, then change it to make it my own version. So? Was it good over rice??

mmm..that sounds really really good. I think you ROCK. I have to always follow a recipe. I lack that gene that can "know" what tastes good.
